Hello everyone,
Well, I guess there is a time and season for everything. I have a great deal on my plate right now, and need to focus on some of these other things so we will not be having any luncheons for a while. I think I have been having these luncheons for five years!! Wow, I can't believe it has been that long, I have loved every moment of it, I have learned so much, and enjoyed meeting all of you!!!

I will miss seeing and interacting with you all! I will definitely miss tasting your wonderful raw food dishes!! Please continue to eat healthy, pull out your recipes from past luncheons, and stay eating raw! I would love to keep in touch, please feel free to call or e-mail me, any time. God bless you all. October Falls Luncheon

It's that time again, and boy, do we have a great speaker this month!! I think many of you have heard of Dr. Claudia Keyworth, she is a health and wellness practitioner here in Utah. She is an author, personal health coach and a renowned lecturer and public speaker.

She recently appeared on the DVD "Marketing Madness are We all Insane". Claudia knows and deeply understands the principles of physical, emotional and spiritual healing. Through her skills, knowledge and passion for life, she has enabled many people to find balance in their lives.
She will be showing parts of a movie called "The Living Matrix", and talk about Bioenergetic Healing and the Heart. I look forward to hearing her again, and hope you all can come!

Our Luncheon will be held on Tuesday the 26th, 11:15 (please try and come at that time, as many have to go back to work). Bring a raw food dish to serve 12-15 people, bring a serving utensil and a copy of the RECIPE, EVEN IF IT IS SIMPLE. Please bring home made dressings, and no processed foods please.
I look forward to seeing you all!! If you haven't purchased pumpkins for the season yet, the Murray Greenhouse (across the street) will be bringing organic pumpkins to sell.

Get a pumpkin remember the proceeds from sale of the pumpkins supports the Greenhouse across the street from Wheeler Farm, many of you bought produce and starts in the spring this year. Good stuff!! Questions call Ande 801 718-3936 or e-mail me at andracoccimiglio@hotmail.com

Apple Pie

Crust

2 cups almonds, soaked, dried
8 cardamom pods, seeds removed from pod [discard pod shells], crush seeds
1/3 cup
agave
2 tablespoons lemon zest, 1 tablespoon reserved for garnish
1 tablespoon lemon juice
½ tablespoon organic vanilla extract
2 teaspoons ground cinnamon

Place almonds and cardamom seeds into a food processor and processor until ground to a fine grainy consistency. Add the agave, 1 tablespoon lemon zest, lemon juice, vanilla extract, and cinnamon. Process to combine ingredients into a ball.

Remove the crust, scraping the side and bottom of the processor bowl to remove any remaining crust. Place the crust on a clean cool flat working surface or cutting board. Use a rolling pin to roll out the crust thin, about ¼ inch thick. Shape as desired. Carefully lift the crust from working surface with a spatula. Reserve in a covered container.

Apples

4 small apples, peeled, cored, chopped [about 4 cups]
2 tablespoon
agave
2 tablespoon lemon juice
½ teaspoon ground cinnamon

Mix the chopped apples, agave, lemon juice, and cinnamon together in a bowl. Set aside in covered container.

Cinnamon Sauce

4 tablespoons agave
2 tablespoons ground cinnamon

Stir the agave and cinnamon until well combined.

Don't miss the Summer Fun

Hello everyone,
Are you all enjoying this beautiful "summer weather--not winter weather", I am!
I just wanted to remind you all that we will NOT BE HAVING A LUNCHEON THIS TUESDAY!

Our "pot luck luncheon" for July, will be a "pot luck dinner", and we will be richly entertained! Lynnette Thredgold and Jedd Moss are amazing musicians, I'm hoping many of you will join us to hear them both. Unfortunately, it cannot be at Wheeler Farm, as planned, (there is no grand piano any longer!) Anyway, it will be held at Lynnette's beautiful home in Bountiful.

There is limited seating, I will need to know, hopefully, with your payment, in advance, if you will be attending, it will be 20.00 in advance, 25.00 at the door. Please see the attachment, call me with questions, 801 718-3936 or e-mail me andracoccimiglio@hotmail.com.

As many of you know, Tonya Zavasta is coming to town again!! This is another "pot luck dinner" instead of luncheon. (She could only make it for the evening and on this date.) Please see the attached flyer, it will be on August 3rd, potluck from 5:00 pm--6:00 pm followed by her lecture.

There is a charge for this event, 20.00 in advance 25.00 at the door. If you didn't get to see her before, you are in for a real treat! We will not be having a luncheon on the 24th of August.
Remember, a raw pot luck item to share (12-15 people, please), bring your serving utensil, and YOUR RECIPE! If you can make it by 11:15, it really helps the rest of us. Look forward to seeing you all. Ande

Come to Our May luncheon

Again, it is time for our luncheon, didn't we just barely have one!! Time flies! Anyway, you are all in for a treat for several months coming with our luncheons. Let me tell you what is happening:

This month we have Jim Simmons, many of you remember him from three years ago. He wrote the book "Original Fast Foods" and "Daniel's Challenge". He is a wonderful man, who has done much research in the health industry. His background is in soil science (we don't have nutritious plants without having nutritious soil).

His "Original Fast Foods" book is the best and most practical all-around dietary lifestyle guide you will find!
